Lemon Ricotta Linguine With Chickpeas and Broccolini

Ingredients
- 16 oz. Ronzoni Whole Grain Linguine
- 1 bunch broccolini (8 oz.)
- 2 Tbsp olive oil (for broccolini)
- 1 tub (8 oz.) ricotta cheese
- ½ tsp. salt
- ½ tsp. black pepper
- ½ cup grated Parmesan cheese
- ¼ cup olive oil (for sauce)
- 3 large lemons
- Red pepper flakes for serving
Instructions
- Cook pasta according to package directions, reserving ½ cup cooking liquid. Preheat broiler for charring lemons.
- Meanwhile, in a large bowl, beat together ricotta, salt, and pepper until whipped, smooth, and creamy. Remove half of the ricotta and keep separate at room temperature until ready to serve.
- Start heating olive oil in large pan over medium-high heat. Meanwhile, prepare broccolini, trimming ½ inch off the bottom.
- Add broccolini to pan and season with salt and pepper, cooking for 5-7 minutes, stirring occasionally, until bright green with the tips lightly browned. Add ½ cup water to the pan, cover, and cook another 1-2 minutes until tender.
- Prepare lemons for charring: Slice off the ends (so the lemon lays flat), then cut in half. Place lemons on a baking sheet on the top rack of the oven and broil for 10 minutes until charred.
- To a large bowl, add pasta, reserved cooking liquid, Parmesan, olive oil, 4 tsp. lemon zest, ¼ cup lemon juice, and chickpeas, tossing well to coat. Add broccolini and toss until just combined.
- Serve with red pepper flakes, a dollop of remaining whipped ricotta, and charred lemon.
