Cozy up with a bowl of warm Chicken Orzo Soup. The broth is rich in carrots, onions, and celery, with a generous helping of hearty chicken and tender bites of orzo pasta. Serve with a squeeze of fresh lemon for a bright, vibrant soup.
Ingredients
- 1 Tbsp oil
- 1 Tbsp butter
- 2 celery stalks, chopped
- 3 carrots, chopped
- 1 medium onion, diced
- 6 cups chicken broth
- 1 Tbsp dried parsley flakes
- 1 cup cooked chicken, chopped
- ⅔ cup Ronzoni® Orzo
- 1 lemon
Instructions
- In a pot, heat oil and butter. Add vegetables, cooking until onions turn translucent, around 6-8 minutes.
- Add chicken broth and parsley. Bring to a boil.
- Stir in cooked chicken and uncooked Orzo; cook Orzo in the same pot according to package directions.
- To serve, add a squeeze of lemon juice. Garnish with a lemon slice.
