Ingredients
  • 12 oz Ronzoni® Creste di Gallo
  • 2 Tbsp butter
  • 1 onion, diced
  • 1 Tbsp fresh thyme, finely chopped
  • 1 Tbsp fresh rosemary, finely chopped
  • 2 Tbsp all-purpose flour
  • 2 cups of 2% milk
  • 2 Tbsp red wine vinegar
  • 2 tsp Worcestershire sauce
  • ½ tsp mustard powder
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ cup Parmesan cheese, grated
  • 1 cup goat cheese, finely crumbled and divided
  • 2 cups arugula
  • 2 Tbsp fresh parsley, finely chopped
  • 1 tsp black pepper, freshly cracked

Instructions

  1. Cook pasta according to package directions; drain reserving 1/3 cup pasta water.
  2. Melt butter in large skillet set over medium heat. Cook onion, thyme and rosemary for 1 to 2 minutes or until fragrant. Sprinkle in flour and cook, stirring, for 2 to 3 minutes or until smooth.
  3. Slowly whisk in milk. Continue to whisk and bring to a boil. Reduce heat to medium-low and cook, stirring constantly, for 8 to 10 minutes or until thickened. Stir in red wine vinegar, Worcestershire sauce, mustard powder, salt, and pepper.
  4. Reduce heat to low. Stir in Parmesan cheese and half the goat cheese until melted. Toss in pasta, pasta water and cook for 1 to 2 minutes or until sauce clings to pasta. Toss in arugula until wilted.
  5. Garnish with remaining goat cheese, parsley, and freshly cracked black pepper.
