Ingredients
- 16 oz Ronzoni® Bow Ties
- 1 cup finely chopped fresh parsley
- ½ cup olive oil
- ¼ cup finely chopped capers
- 4 tsp lemon zest
- ¼ cup lemon juice
- 1 Tbsp anchovy paste
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp black pepper
- ¼ tsp red chili flakes
- 8 oz thinly sliced smoked salmon, cut into ribbons
- 1 avocado, halved, pitted, peeled, and diced
Instructions
- Cook pasta according to package directions; drain well.
- Meanwhile, in a large bowl, stir together parsley, olive oil, capers, lemon zest, lemon juice, anchovy paste, garlic, salt, pepper, and red chili flakes.
- Add pasta, tossing to coat well.
- Add smoked salmon and avocado, tossing until combined.
