Ingredients
  • 8 oz Ronzoni® Rings
  • 2 Tbsp olive oil
  • ½ finely minced onion
  • 2 cloves garlic, finely chopped
  • 6 oz tomato paste
  • 3 cups chicken broth
  • ½ cup packed basil leaves, finely chopped
  • Pinch of salt and pepper
  • Freshly grated Parmesan, optional, for garnish
  • Chopped parsley, optional, for garnish

Instructions

  1. Heat oil in a large Dutch oven or soup pot over low heat. Add onions and sauté for about 4 minutes, until slightly tender.
  2. Add tomato paste and garlic, and continue sautéing for 2 minutes, stirring gently to ensure the garlic does not burn.
  3. Deglaze the pot with chicken broth. Increase heat to medium and bring pot to boil.
  4. Add basil and pasta. Cook for about 10 minutes, or until just al dente. Stir in salt and pepper to taste.
  5. Serve in individual bowls and garnish with Parmesan and parsley as desired.

Pro Tip

For more veggies, bake carrots and red and orange bell peppers until soft. Puree and add to sauce.
