Thai Chicken Soup

The magic of this Thai Chicken Soup is in the broth. It’s a light soup with creamy coconut milk to balance the warming spice, and fish sauce to create an umami-rich depth of flavor. Make it your own — top with cilantro, bean sprouts, lime, and sriracha.

Ingredients
  • 8 oz Ronzoni® Vermicelli
  • 2 oz olive oil
  • ½ yellow onion, diced
  • 2 medium carrots, peeled and thinly sliced
  • 2 Tbsp red curry paste
  • 1 Tbsp grated ginger
  • 2 garlic cloves, minced
  • 1 lb cooked, shredded chicken
  • 6 cups chicken broth
  • 2 tablespoons fish sauce
  • 1 Tbsp sugar
  • 2 tsp salt
  • 1 tsp pepper
  • 8 oz baby bella pepper, thinly sliced
  • 1 red or orange bell pepper, thinly sliced
  • 14 oz can full-fat unsweetened coconut milk
  • 2 Tbsp fresh Thai or sweet basil, thinly sliced
  • ½ cup fresh lime juice, plus extra for garnish
  • ½ cup chopped cilantro, plus extra for garnish
  • Bean sprouts, optional garnish
  • Sriracha, optional, to taste

Instructions

  1. Heat oil in a large Dutch oven or soup pot over low heat. Add onions and carrots and sauté for about 4 minutes, until slightly tender. Add the curry paste, ginger, and garlic, and continue sautéing for 2 minutes, stirring gently to ensure the garlic does not burn.
  2. Add chicken to pot. Pour in chicken broth, fish sauce, sugar, salt, and pepper. Increase heat to medium and bring to a boil. Then reduce heat to medium-low and let simmer for about 10 minutes.
  3. Add the remaining vegetables and basil, then simmer for 5 minutes. Add Vermicelli and simmer for another 5 minutes. Stir in can of coconut milk, cilantro, and lime juice. Finish with additional salt and pepper to taste.
  4. Serve in individual bowls and garnish as desired.

Dial up the heat with extra chili flakes or chili oil drizzled before serving.
