  • 16 oz Ronzoni® Gemelli
  • 1 tub (8 oz) ricotta cheese
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup grated Parmesan cheese
  • ¼ cup olive oil
  • 4 tsp lemon zest
  • ¼ cup lemon juice
  • 2 Tbsp finely chopped fresh parsley

  1. Cook pasta according to package directions. Drain well, reserving ¼ cup cooking liquid.
  1. Meanwhile, in large bowl, beat together ricotta, salt and pepper until whipped, smooth and creamy.
  2. Add pasta, reserved cooking liquid, Parmesan, olive oil, lemon zest and juice to bowl, tossing well to coat. Garnish with parsley.
